Casey’s Breakfast Pizza
While Casey’s General Store began making experimental breakfast pizzas in the mid-80s, the Iowa-based gas station chain officially rolled out their famous breakfast pizza across all locations on September 14, 2001. They replaced pizza sauce with scrambled eggs and cheese, with bacon or sausage or more.
I think Adis introduced me to their breakfast pizza, asking to stop there if he had an activity before school and didn’t have time for breakfast. (Otherwise, the kids rode a school bus.) It became a regular early treat.
Breakfast Pizza for Dzenaela, Adis, and Denis
Zlatka and Samir worked two jobs, so sometimes I stayed with their kids. They’d bought a condo just a couple of miles from our house, so I didn’t have to drive far. But I was already deep into fibromyalgia, which complicated everything.
Sometimes I’d fix favorites for them–tomato soup and toasted cheese sandwiches, maybe my version of breakfast pizza. I started with a Boboli pizza crust, so I wouldn’t have to make one. All I needed to do was scramble ten eggs and add cheese, then bake a little. Here’s the recipe I used:
Breakfast Pizza 1 large Boboli pizza crust 10 eggs, scrambled 6 oz. shredded cheddar cheese 6 oz. shredded mozzarella cheese (or substitute Pepper Jack for one of them) Cook eggs until almost set. Add half the cheeses and mix well. Pour onto the crust on a pizza or cookie sheet and spread to the edges. Top with remaining cheese. Bake at 350 degrees 15-20 minutes. Let sit 3-4 minutes before cutting into 8 pieces.
You could add meat, but the kids liked it this way. Since I’d had to give up gluten, they could enjoy the whole thing.

We’ve been known to get Casey’s Supreme Pizza. Yes, gas station pizza. They don’t offer gluten free, but their scrumptious toppings slide off handily and I can certainly enjoy that.
There’s no restaurant open for lunch in the tiny town of Dexter, Iowa (population 640), but hey, you can get pizza at the Casey’s station and take it to the Dexter park to enjoy. And at the other end of town, Drew’s Chocolates for dessert!

When we visited our son in South Dakota, we went to a Casey’s Pizza. I wonder if it is a chain.

We have a Casey’s pizza in Port Huron but it’s not affiliated. The owner’s named Casey and was a hockey player.
